This was a complete experiment. Manoj was coming over. I did not have many veggies except raw banana and some raw mango! I was in no mood to make separate sabzi and rotis. Raw banana parathas made our day! And India won the match against Ireland too :)
My recipe-
2 raw bananas boiled n mashed
1 small onion chopped
1 tsp ajwain / carom, mangrela / nigella seeds
Salt to taste
For Dough-
2 cups whole wheat flour
Water
Mix all these and keep aside. Make a dough with the flour. Divide the dough and filling into portions. Roll one portion flour in a ball in your palm, flatten it to make a hollow, put in a portion of the stuffing and form a round again. Flatten and make into parathas. Cook in oil / dry as you prefer them.
If you are making the stuffed parathas dry, serve with ghee. I served with aloo soyabean sabzi and khatta meetha mango pickle.
Raw banana is a good source of dietary fibre and several vitamins and scores over boiled potato.
