Aloo Soyabean Sabzi (potatoes soybean veggie)

This is an old recipe, which my MIL has told me about, though this is originally my Bhabhi's recipe.


Soybean is a protein rich legume. Infact it is a complete protein food, and is recommended for all vegetarians and vegans who do not eat non veg.

This veggie can be served with roti or rice.
This is how I made it-

1 chopped onion
1 chopped tomato
1tsp ginger garlic paste
1 tsp each of turmeric, coriander, garam masala / all spice
salt to taste
1 cup soybeans- soaked overnight,pressure-cooked in 1 cup water for one whistle and simmered for 15-20 mins.
2 boiled potatoes cubed
oil for cooking
jeera / cumin for tempering

Heat oil in a kadahi/wok. Add onion, fry till they turn pink. Add tomatoes and cook till done. Add the masalas and salt, fry for a few mins. Add the potatoes and cook for another couple of mins. Now add the soybeans along with the water in which they cooked. Add more water if needed. Simmer on gas for five mins or so. Let the masalas soak in the beans. Let stand for another 10 mins before serving. Serve with roti / rice.
